Spinach Soup
Ingredients:
1 pint grape tomatoes
1 stalk celery
⅓ cucumber
1 orange
4 cups baby spinach
2 basil leaves or a few sprigs of cilantro
1⁄2 avocado (optional)
Directions:
Blend the tomatoes, celery, and cucumbers with the juice of 1 orange until smooth. Add the spinach and blend more. Add the basil, cilantro and avocado (as desired), and blend. Serve and enjoy immediately!
This is raw soup intended to be served at room temperature. It should not be heated. However, if all the ingredients are cold, you can add some warm water into the soup to get it to room temperature.
