Raspberry Kiwi Lime Chia Pudding

For the chia pudding:

  • 1 cup raspberries, fresh

  • 1 cup unsweetened coconut milk or oat milk

  • 6-10 drops of stevia or 2 tsp maple syrup or raw honey

  • 1 tsp lime zest

  • 1 tsp lime juice

  • 3 tbsp chia seeds

For topping: any combination of this that sounds good!

  • 1 kiwi, thinly sliced

  • 1/2 banana, thinly sliced

  • 1/4 cup fresh raspberries

  • 1/4 cup fresh blueberries

1. Place the chia seeds in a bowl. Stir in the coconut/oat milk, stevia or sweetener, lime zest & juice, and chia seeds.

2. Set aside to soak for 1 hour, until thick and jelly-like.

3. Divide the chia pudding between two bowls and serve with bananas, raspberries or kiwis.
