Vegan

Servings: 4-6

Ingredients: 

  • 3 celery stalks

  • 4 button mushrooms

  • ¼ orange or red bell pepper, finely diced

  • ¼ radish, finely sliced

  • 1 handful sprouts 

  • ¼ bunch fresh dill, finely chopped

  • ¼ bunch fresh parsley, finely chopped 

  • 1 tsp. Sea salt

  • 1 tsp black pepper (optional) 

  • 1 Tbs. dulse flakes

  • 1 garlic clove minced

  • 2 cups sunflower seeds

  • 2 Tbs. tahini

  • ½ c. fresh squeezed lemon juice

  • ¼ cup water 

  • Coconut, teff or lettuce wrap

Directions

  1. Combine in a large bowl the celery, mushrooms, radish, bell pepper, parsley and dill. Then stir in salt, pepper and dulse.

  2. In a blender/processor combine the sunflower seeds, tahini and garlic until smooth.

  3. Add lemon juice and water. 

  4. Stir the paste into the vegetables and place in your wrap

  5. Enjoy!
