Mock Tuna

Ingredients:
3 celery stalks
4 button mushrooms
¼ orange or red bell pepper, finely diced
¼ radish, finely sliced
1 handful sprouts
¼ bunch fresh dill, finely chopped
¼ bunch fresh parsley, finely chopped
1 tsp. Sea salt
1 tsp black pepper (optional)
1 Tbs. dulse flakes
1 garlic clove minced
2 cups sunflower seeds
2 Tbs. tahini
½ c. fresh squeezed lemon juice
¼ cup water
Coconut, teff or lettuce wrap
Directions
Combine in a large bowl the celery, mushrooms, radish, bell pepper, parsley and dill. Then stir in salt, pepper and dulse.
In a blender/processor combine the sunflower seeds, tahini and garlic until smooth.
Add lemon juice and water.
Stir the paste into the vegetables and place in your wrap
